Pot roast infused with fragrant herbs and rich red wine.
Ingredients:
  • 3 pounds boneless beef chuck roast
  • 2 tablespoons all-purpose flour
  • 2 tablespoons canola oil
  • 0.5 cup water
  • 0.5 cup red wine
  • 1 teaspoon dried basil
  • 0.5 teaspoon dried marjoram
  • 0.5 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 1 onion, sliced
  • 6 red potatoes, washed and halved
  • 6 carrot, peeled and cut into 2-inch lengths
  • 8 pearl onions, peeled and halved
Instructions:
  • Preheat your oven to 350°F (175°C).
  • Coat the roast with flour and let it rest. Heat canola oil in a Dutch oven over medium-high heat. Sear the roast on all sides for about 10 minutes. Remove from heat. Add water and wine, then season with basil, marjoram, thyme, salt, and pepper. Top the roast with onion slices.
  • Cover the dish and bake in the preheated oven for 3 hours. Add the potatoes, carrots, and pearl onions. If the roast looks dry, pour in some extra water. Keep baking covered until the roast is fork-tender, about 1 more hour.
