Delicious and quick shrimp curry stir-fry with asparagus and broccoli, perfect for a satisfying solo meal.
Ingredients:
  • 1 tablespoon vegetable oil, or to taste
  • 0.25 onion, chopped
  • 1 clove garlic, minced
  • 1 teaspoon curry powder, or to taste
  • 0.25 teaspoon ground cumin
  • 1 cup chopped asparagus
  • 0.5 cup broccoli florets
  • 2 tablespoons water
  • 3.5 ounces uncooked medium shrimp, peeled and deveined
Instructions:
  • In a big skillet over medium heat, sauté onions and garlic in oil until translucent, about 5-7 minutes.
  • Combine curry powder, cumin, salt, and pepper with the onion mixture. Add asparagus and broccoli to the skillet, pour water over the vegetables, and cook until slightly tender, for about 4 to 5 minutes.
  • Add the shrimp to the vegetable mixture and sauté until they turn bright pink on the outside and opaque in the center, approximately 5 minutes.
