Succulent pork and broccoli curry stir-fry with aromatic jasmine rice. Perfect for meal prep and cozy nights!
Ingredients:
  • 2 cups water
  • 1 cup uncooked white rice
  • 1.5 pounds leftover roast pork, cubed
  • 2 (10.75 ounce) cans condensed cream of celery soup
  • 0.5 cup mayonnaise
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon curry powder
  • 1 (10 ounce) package frozen broccoli, thawed
Instructions:
  • Preheat the oven to 350°F (175°C) for a perfect bake.
  • In a saucepan over medium-high heat, bring water and rice to a boil. Reduce heat to low, cover, and simmer for about 20 minutes until rice is tender.
  • In a large bowl, combine cubed pork, cooked rice, and broccoli. Add cream of celery soup and mayonnaise. Season with pepper and curry powder. Transfer mixture to a 9x13-inch baking dish, cover with aluminum foil, and bake.
  • Bake in the preheated oven for 45-50 minutes, uncovering for the final 5 minutes.
