Quick and flavorful stir-fry perfect for busy schedules.
Ingredients:
  • 300g (1 1/2 cups) jasmine rice
  • 750ml (3 cups) water
  • 4 makrut lime leaves, torn
  • 36.80 gm vegetable oil
  • 400g pork fillet, thinly sliced across the grain
  • 1 small red onion, halved, cut into thin wedges
  • 200g broccoli, cut into florets
  • 150g green beans, topped, halved
  • 40.00 ml kecap manis
  • 42.00 gm fresh lime juice
  • 2 makrut lime leaves, extra, finely shredded
Instructions:
  • Rinse the rice under cold running water in a sieve until the water runs clear. Drain. In a large saucepan over medium-high heat, bring water to a boil. Stir in rice and makrut lime leaves, cover, and simmer over low heat for 15 minutes until water is absorbed. Remove from heat, let it stand covered for 5 minutes, then discard lime leaves.
  • Heat a third of the oil in a large wok or frying pan over high heat. Cook a third of the pork until browned, about 2 minutes. Transfer to a plate. Repeat with the remaining pork in two more batches, ensuring the wok is reheated between batches.
  • Heat the leftover oil in the wok on medium-high. Cook the onion, broccoli, beans, and garlic, stirring constantly for 5 minutes until the broccoli and beans are vibrant green and tender-crisp.
  • Combine the pork, kecap manis, and lime juice in the wok, stirring until heated through. Serve the rice and pork mixture in individual bowls, garnishing with extra kaffir lime leaves.
