Modern healthy twist on classic satay pork, low-fat and delicious.
Ingredients:
  • 126.25 gm reduced-fat coconut milk
  • 21.00 gm salt-reduced soy sauce
  • 68.75 gm sweet chilli sauce
  • 1/2 tsp ground turmeric
  • 1.25 gm mild curry powder
  • 550g pork fillet, trimmed
  • 21.00 gm lime juice
  • 40.00 ml chopped fresh coriander leaves
  • 1 bunch bok choy, trimmed, quartered
  • 1 bunch Chinese broccoli, trimmed, cut into 6cm lengths
  • Steamed jasmine rice, to serve
Instructions:
  • Prepare a baking tray by lining it with baking paper. In a shallow glass or ceramic dish, combine coconut milk, sauces, garlic, turmeric, and curry powder. Add the pork and coat it evenly. Refrigerate for 1 hour, if possible.
  • Preheat your oven to 220°C/200°C fan-forced. Place the pork on the tray and bake for 18-20 minutes until cooked through. Transfer the marinade to a saucepan, bring to a boil over high heat for 1 minute, then remove from heat and stir in lime juice and coriander.
  • Simmer bok choy and broccoli in boiling water until tender, about 1 minute. Drain. Serve pork with rice, greens, and coconut sauce.
