Quick and flavorful Pork Stir Fry with lean pork, green onions, and garlic, ready in just 25 minutes. Say goodbye to take-out and enjoy a homemade meal!
Ingredients:
  • 1 pound pork loin or boneless pork chops
  • 2 tablespoons soy sauce (use gluten-free soy sauce if cooking gluten-free)
  • 1 teaspoon sugar
  • 1 teaspoon cornstarch
  • 4 tablespoons peanut oil or canola oil
  • 5 cloves garlic, thinly sliced
  • 8-12 scallions, sliced diagonally into 1 to 2-inch pieces, green and white parts included
  • 1/2 teaspoon sesame oil (optional)
  • Cooked rice , to serve
Instructions:
  • Prepare the pork: Slice boneless pork chops into two thin layers, or cut pork loin slices to 1/2 inch thickness. Place slices between plastic wrap or wax paper and flatten to 1/4 inch thickness using a mallet or wine bottle. Cut the pork into thin strips, approximately 1 1/2 inches long, against the grain.
  • Prepare the pork marinade by combining soy sauce, sugar, and cornstarch in a large bowl. Toss in the pork strips and mix well to coat them entirely. Let it sit for at least 10 minutes.
  • To make the pork stir-fry, heat peanut oil in a wok or large sauté pan over high heat until shimmering. Add garlic slices and cook until browned at the edges, about 30 seconds. Then, add pork strips and stir-fry until they change color, about 90 seconds, stirring constantly.
  • Toss in green onions and drizzle with sesame oil: Throw in the sliced green onions and stir-fry for an additional minute until wilted. Remove from heat and drizzle with sesame oil, if desired.
  • Enjoy this dish right away as soon as it's ready. Serve it on its own for a paleo and low-carb option, or pair it with rice for a satisfying meal.
