Spicy pork stir-fry with broccolini & thai basil

Stir-fry fresh greens with curry paste for a quick and flavorful dish.
Ingredients:
  • Olive oil spray
  • 400g pork leg steaks, thinly sliced
  • 1 red onion, cut into thin wedges
  • 28.00 gm Red Curry Paste
  • 1 bunch broccolini, cut into 4cm lengths
  • 1 bunch gai lan (Chinese broccoli), stems cut into 3cm lengths, leaves coarsely chopped
  • 40.00 gm water
  • 21.00 gm fresh lime juice
  • 24.40 gm fish sauce
  • 125.00 ml fresh Thai basil leaves
  • Steamed rice, to serve
  • 40.00 ml chopped toasted cashews
Instructions:
  • 1. Preheat a large wok or non-stick frying pan over high heat. Coat with oil spray. Sear one-third of the pork until golden, about 2-3 minutes. Transfer to a plate. Repeat with the rest of the pork in two more batches.
  • Coat the wok with oil. Sauté the onion for 2 minutes until soft. Toss in the curry paste and stir for 1 minute until fragrant. Introduce the broccolini and gai lan stems along with water. Stir for 1 minute. Mix in the gai lan leaves and stir for 2 minutes until they just wilt.
  • Combine lime juice, fish sauce, and sugar in a bowl and stir until sugar dissolves. Add the pork and lime juice mixture to the wok and stir-fry for 1-2 minutes until heated through. Remove from heat, toss in basil, and divide among serving bowls with rice. Top with cashews.
