Korean Fried Pork With Stir-Fried Celery

Spicy Korean pork stir-fry with celery, red pepper flakes, green onions, and ginger.
Ingredients:
  • 4 tablespoons soy sauce, divided
  • 2 tablespoons tomato paste
  • 2 green onions, minced
  • 2 tablespoons rice wine
  • 2 tablespoons white sugar, divided
  • 1 tablespoon sesame oil
  • 2 tablespoons grated fresh ginger
  • 3 cloves garlic, crushed
  • 0.75 teaspoon red pepper flakes, divided
  • 1 pound pork loin, cut into strips
  • 0.25 cup canola oil, divided
  • 4 stalks celery, cut into strips and leaves reserved
Instructions:
  • Combine soy sauce, tomato paste, green onions, rice wine, sugar, sesame oil, ginger, garlic, and red pepper flakes in a bowl. Add pork, cover with plastic wrap, and marinate in the refrigerator for at least 1 hour.
  • In a skillet over medium-high heat, heat 1 tablespoon of canola oil. Cook the pork in batches until slightly pink in the center, ensuring not to overcrowd the pan, for about 10 minutes. Use an instant-read thermometer; the center should reach at least 145 degrees F (63 degrees C).
  • In a skillet over medium-high heat, warm 1 teaspoon of canola oil. Saute celery, the remaining 1 tablespoon of sugar, and the remaining 1/4 teaspoon of red pepper flakes for 1 minute. Stir in the remaining 2 tablespoons of soy sauce and cook for another minute. Add celery leaves and continue to cook until celery is crisp-tender, about 3 minutes. Serve with pork.
