Upgrade your weeknight meal with this flavorful pork bulgogi dish cooked with garlic, ginger, and sesame oil.
Ingredients:
  • 500g pork fillet, sliced thinly
  • 4 garlic cloves, crushed
  • 20.00 ml finely grated fresh ginger
  • 1/2 tsp dried chilli flakes
  • 2 tsp sesame oil
  • 16.00 gm brown sugar
  • 55.20 gm vegetable oil
  • 131.25 gm salt-reduced soy sauce
  • 2 carrots, halved lengthways, thinly sliced diagonally
  • 1 bunch broccolini, cut into 3cm pieces
  • 250g snow peas
  • 76.25 gm oyster sauce
  • 250g dried rice stick noodles
  • 82.50 ml fresh coriander sprigs
  • Lime wedges, to serve
  • 1 red apple, thinly sliced
Instructions:
  • Mix together the pork, garlic, ginger, chili, sesame oil, sugar, 1 tablespoon vegetable oil, and half of the soy sauce in a bowl until well coated.
  • In a large frying pan over high heat, sizzle the last tablespoon of vegetable oil. Sauté carrot and broccolini until tender, about 3 to 4 minutes. Transfer to a serving bowl.
  • Heat the remaining oil in the same frying pan over high heat. Take the pork out of the marinade, setting the marinade aside. Cook the pork, stirring continuously, for 3 to 4 minutes until it is fully cooked.
  • Combine the carrot mixture, snow peas, pork marinade, oyster sauce, and the rest of the soy sauce in the pan. Stir and cook for 1 minute until everything is heated and vegetables are tender.
  • While noodles cook according to package instructions, drain them. Spread noodles evenly on serving plates. Add pork stir-fry and coriander on top. Serve with lime wedges and fresh apple slices.
