Indulgent Cypriot hand pies with orange-scented tahini filling, a must-try baking delight.
Ingredients:
  • 1.5 cups white sugar, divided
  • 1.25 cups warm water, divided
  • 1 ounce compressed fresh yeast
  • 2 cups bread flour
  • 2 cups unbleached all-purpose flour
  • 6 tablespoons sesame seeds
  • 2 teaspoons ground cinnamon
  • 1 orange, zested
  • 1.25 cups tahini
Instructions:
  • Mix together 1 teaspoon of sugar, 1/4 cup of water, and yeast in a small bowl until well combined using a fork.
  • Combine bread flour and all-purpose flour in a mixing bowl. Add salt, pour in yeast mixture, and gradually mix in remaining water until dough forms. Transfer dough to a flat work surface and knead until soft and smooth for about 15 minutes.
  • Place the dough in a lightly greased bowl, cover, and let it rise in a warm spot for 45 minutes.
  • Meanwhile, make the filling by combining the remaining sugar, sesame seeds, cinnamon, and orange zest with the tahini. Mix until well combined.
  • Preheat the oven to 400°F (200°C) and prepare two baking sheets with parchment paper.
  • Gently flatten the dough and cut it into 8 equal pieces, keeping it covered while working with one piece at a time.
  • Flatten 1 piece of dough into a 6-inch disk. Add 2 tablespoons of filling in the center, fold edges together, and seal tightly. Press down gently, then roll back into a 6-inch disk. Roll disk into a 12-inch log, cut in half, and slightly lengthen each piece. Roll both ends towards the middle to form an 'S' shape. Layer one spiral over the other, press down, then flatten slightly with your palm. Transfer to the baking sheet.
  • Continue the process with the rest of the dough and filling to create a total of 16 hand pies. Cover the finished pies loosely to allow them to rise slightly as you work on the remaining ones.
  • Bake until beautifully golden for about 18 minutes in the preheated oven.
