Classic chicken and dumplings recipe for nostalgia lovers who enjoy traditional, hands-on cooking experience.
Ingredients:
  • 3 cups all-purpose flour
  • 0.25 teaspoon baking soda
  • 0.25 teaspoon salt
  • 2 tablespoons shortening
  • 1 cup ice water
  • 1 (4 pound) whole chicken, cut into 8 pieces
  • 1 tablespoon seasoning salt, or to taste
  • 3.5 quarts water
  • 0.5 small onion, chopped
  • 2 stalks celery, chopped
  • 0.25 cup margarine
  • 1 teaspoon poultry seasoning
Instructions:
  • Combine flour, baking soda, and salt in a large bowl. Add shortening and mix until it resembles coarse crumbs. Gradually stir in water until a ball of dough forms. Divide dough in half and shape into balls. Wrap in plastic and refrigerate for 2 hours or overnight.
  • Carefully peel the skin off the breast, thigh, and back of the chicken while keeping it on the legs and wings. Season the chicken with seasoning salt and place it in a large stock pot. Add water, onion, celery, and margarine. Bring to a boil, then simmer for 1 1/2 hours until the chicken is fall-off-the-bone tender.
  • Roll out dough, cut into squares, simmer in broth for 2 minutes. Stir occasionally, add water if needed. Season broth with salt, pepper, and poultry seasoning. Simmer for 15 minutes until dumplings are cooked through.
