Quick and delicious dessert made in minutes, perfect for a busy mealtime.
Ingredients:
  • 15.00 gm cornflour
  • 390.00 gm soy milk
  • 3 egg yolks
  • 40.00 gm caster sugar
  • 82.50 ml pecans
  • 40.50 gm pure maple syrup
Instructions:
  • In a heatproof, microwave-safe bowl, whisk together cornflour and 1/4 cup of soy milk until smooth. Gradually whisk in the rest of the milk. Microwave on medium-high (75%) for 1 to 1 1/2 minutes until heated through, without boiling.
  • While using an electric hand mixer, whisk egg yolks and sugar in a microwave-safe bowl until pale, about 1 minute. Pour in the milk mixture and stir to combine. Microwave on medium-high (75%) for 1 minute 30 seconds, stir, then microwave for additional 1 minute 30 seconds until the custard thickens. Divide the mixture into four 1/2 cup dishes, cover with plastic wrap, and freeze for 2 to 3 hours until just frozen.
  • Wrap pecans in paper towels and microwave on low for 2 to 3 minutes until toasted. Allow to cool, then chop into small pieces. Mix chopped pecans with maple syrup in a jug.
  • Before serving, gently slide a knife around the edge of each dish. Invert the custards onto plates and garnish with maple pecans.
