Delight in dairy-free lemon curd made with creamy coconut oil for a bright and luscious treat.
Ingredients:
  • 3 large lemons, zested and juiced
  • 0.33333334326744 cup white sugar
  • 4 large egg yolks
  • 0.125 teaspoon salt
  • 3 tablespoons coconut oil, at room temperature
Instructions:
  • Fill a medium saucepan with 1 inch of water and gently heat until just simmering.
  • Combine fresh lemon juice, zesty lemon zest, sweet sugar, rich egg yolks, and a pinch of salt in a glass bowl. Place the bowl over gently simmering water. Cook while whisking continuously until the mixture transforms into a creamy and thick curd, which takes about 10 minutes.
  • Take the bowl off the simmering water and slowly whisk in the coconut oil until it melts and blends in smoothly.
  • Strain the curd through a fine-mesh sieve, discarding any solids. Cover the surface with plastic wrap to prevent skin formation. Chill in the refrigerator until set, at least 2 hours.
