Dairy-free orange soft-centred Easter eggs

Zesty orange-filled dairy-free Easter eggs.
Ingredients:
  • 75.00 gm pure icing sugar
  • 9.20 gm sunflower oil
  • 10.40 gm soy milk
  • 1/2 tsp orange essence
  • Orange food colouring gel
  • 150g dairy-free no-added-sugar dark chocolate, chopped
Instructions:
  • Sift sugar into a bowl. Mix in oil, milk, and essence until smooth. Color fondant orange with food coloring. Place 1 tablespoon of fondant in a separate bowl and set aside.
  • In a microwave-safe bowl, melt the chocolate on HIGH (100%) for 1 minute, stirring halfway through with a metal spoon until smooth. Let it stand for 2 minutes to cool slightly.
  • Carefully fill each cavity of the Easter egg mould with 1 teaspoon of melted chocolate. Use the back of a metal spoon to evenly spread the chocolate, creating a solid outer shell. Place in the freezer for 5 minutes to set.
  • Fill each chocolate shell with a generous 1 1/2 teaspoons of orange mixture. Then, carefully cover the filling with 2 teaspoons of melted chocolate to completely encase it. Place in the freezer for 10 minutes, or until set.
  • Combine water with reserved fondant until it reaches a drizzling consistency. Transfer to a snap-lock bag and snip off a corner. Gently remove eggs from the mold. Pipe a small amount of orange fondant onto the rounded side of each egg, following the picture as a reference. Allow to set for 1 hour before serving.
