Dairy-free pea and leek dish, rich and creamy.
Ingredients:
  • 2 leeks, pale section only,thickly sliced
  • 1 large washed potato, peeled, coarsely chopped
  • 1l vegetable stock
  • 500g pkt frozen peas
  • 42.00 gm lemon juice
Instructions:
  • In a large saucepan, combine leek, potato, and stock. Bring to a boil over high heat, then reduce to medium heat. Cook partially covered for 20 minutes until the potato is tender.
  • Set aside 1 cup (120g) peas. Add the rest to the pan and bring to a gentle simmer. Let it cool slightly.
  • Blend the pea mixture until smooth using a stick blender, then return the pan to medium heat. Add lemon juice and reserved peas, stirring until heated through. Season well and divide the soup into serving bowls.
