Dalgona Candy recipe

Create homemade Dalgona candy inspired by Squid Game. Follow tips for perfect Korean honeycomb texture. Read recipe notes to prevent seizing or sticking.
Ingredients:
  • 115g (½ cup) white sugar
  • Heaped ½ tsp bicarbonate soda
Instructions:
  • In a saucepan over medium-high heat, combine sugar and 60ml (1/4 cup) water. Bring to a boil, swirling the pan occasionally until sugar dissolves. Boil for 8-10 minutes until sugar hardens and turns deep golden brown at the edges.
  • Sprinkle bicarbonate of soda over the mixture and whisk together. Take off the heat and let it puff up. Allow to rest for 1 minute, then stir to break down the foam. Spoon mixture onto a silicone baking mat in dessert-sized portions (about 4 candies).
  • Efficiently spray a metal press or small, flat-bottomed metal bowl with vegetable oil to coat. Delicately flatten 1 candy to 0.5cm thickness using the press or bowl. Repeat with the remaining 3 candies, applying oil as needed. Allow to cool fully before serving.
