Dansk Aebleskiver (Danish Doughnuts)

Delicious Danish donuts dusted with powdered sugar and topped with raspberry or strawberry jam.
Ingredients:
  • 8 eggs
  • 1 quart buttermilk
  • 0.25 cup melted butter
  • 4 cups all-purpose flour
  • 1 teaspoon salt
  • 2 tablespoons white sugar
  • 1 teaspoon baking soda
  • 1.5 tablespoons ground cardamom
  • 2 cups vegetable shortening, melted
Instructions:
  • Heat the electric aebleskiver pan following the manufacturer's instructions.
  • In a mixing bowl, combine eggs, buttermilk, and butter, and beat until smooth. Gradually whisk in flour, salt, sugar, baking soda, and cardamom until mixture is well blended and smooth.
  • Add a tablespoon of shortening to each cup in the preheated aebleskive pan and let it heat up. Fill each cup with batter until 3/4 full and cook for 3 to 4 minutes until golden brown on the bottom. Use a skewer to lift and turn each aebleskive a quarter of a turn to allow the uncooked batter to flow and cook. Repeat the process until the aebleskives are perfectly golden brown. Drain on paper towels before serving.
