Irresistible chocolate gingerbread men brownies are perfect for family moments.
Ingredients:
  • 200g butter, chopped
  • 120g premium 70% cocoa chocolate, chopped
  • 330g caster sugar
  • 75g plain flour
  • 35g cocoa powder
  • 4 free range eggs, lightly whisked
  • 4.40 gm vanilla extract
  • 80g Premium 70% cocoa chocolate, extra, melted, cooled
  • Nestle bakers' choice choc bits milk, to decorate
Instructions:
  • Preheat oven to 190C. Line the base and two long sides of an 18cm x 28cm slice pan with baking paper, making sure to leave some overhang on the sides.
  • Combine the butter and chocolate in a saucepan over gentle heat until velvety and well mixed. Take off the heat and fold in the sugar. Let it sit for 5 minutes to cool.
  • Sift the flour and cocoa over the chocolate mixture, then add the eggs and vanilla. Stir until well combined and pour into the pan. Bake for 30 minutes or until the top is set and firm. Let it cool completely in the pan, then chill in the fridge for 2 hours.
  • Carefully lift the brownie out of the pan and slice it into 8 equal 9cm x 7cm pieces. Then, use a 7.5cm gingerbread cutter to create gingerbread man shapes.
  • Transfer the extra melted chocolate into a sealable plastic bag and cut off one corner. Drizzle the chocolate onto the gingerbread men to create mouths, then use it to stick Choc Bits on for eyes and buttons.
  • Place a dollop of chocolate on each eye and allow to firm up.
