Decadent chocolate meets spicy gingerbread in this winning slice recipe!
Ingredients:
  • 100g unsalted butter, chopped
  • 135.00 gm brown sugar
  • 251.25 gm golden syrup
  • 5.00 gm ground ginger
  • 2.50 gm ground cinnamon
  • 2 eggs, lightly beaten
  • 84.98 gm milk
  • 250.00 ml plain flour
  • 150.00 gm self-raising flour
  • 100g dark chocolate, chopped
  • 100g white chocolate, chopped
  • Icing sugar mixture, for dusting
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced. Grease a 3cm-deep, 20cm x 30cm lamington pan and line it with baking paper, leaving a 2cm overhang at the long ends.
  • In a saucepan over medium heat, combine butter, sugar, syrup, ginger, and cinnamon. Stir and cook for 3 minutes until the butter is melted and everything is well combined. Take off the heat and let it cool for 10 minutes.
  • Combine the egg and milk, then mix well. Sift the flours into a large bowl. Gently fold in the egg mixture, dark chocolate, and white chocolate.
  • Transfer the mixture into the pan and bake for 25 minutes, or until it's firm. Let it cool down to room temperature, then slice it into bars, dust with icing sugar, and serve.
