Decadent dark chocolate truffles for chocolate lovers.
Ingredients:
  • 40g (1/4 cup) slivered almonds
  • 125ml (1/2 cup) thickened cream
  • 2 x 200g pkts good-quality dark chocolate, finely chopped
  • 2 tsp Amaretto liqueur
Instructions:
  • Toast almonds in a small frying pan over medium heat, stirring constantly, for 2 minutes until fragrant. Allow to cool before using.
  • In a heatproof bowl, combine cream and half of the chocolate. Set the bowl over a saucepan with simmering water, ensuring it doesn't touch the water. Stir occasionally with a metal spoon until the chocolate melts and the mixture is smooth. Remove from heat, add liqueur and toasted almonds, then cover with plastic wrap. Chill in the fridge for 1 hour until firm to form into balls.
  • Prepare a tray lined with non-stick baking paper. Using a teaspoon, scoop out 1 1/2 teaspoons of the chocolate mixture and roll into a ball with your hands. Place the ball on the tray and repeat with the rest of the chocolate mixture. Chill in the fridge for 15 minutes until firm.
  • In a medium bowl, melt the remaining chocolate by placing it over a saucepan of simmering water, ensuring the bowl doesn't touch the water. Stir gently with a metal spoon for about 4 minutes until the chocolate is smooth and melted. Remove from heat.
  • Prepare a tray with non-stick baking paper. Using 2 forks, dip each truffle into melted chocolate, ensuring it is evenly coated. Gently tap the fork to remove any excess chocolate before transferring the coated truffle to the tray. Repeat for the rest of the truffles and let them set for 30 minutes.
