Decadent mocha cookie dough coated in sugary goodness, with a crispy exterior and a gooey center.
Ingredients:
  • 1 cup butter, at room temperature
  • 0.75 cup brown sugar
  • 0.33333334326744 cup white sugar
  • 0.25 cup instant coffee powder
  • 1 teaspoon vanilla extract
  • 0.75 cup cocoa powder
  • 0.5 cup white sugar
  • 24 dark chocolate wafers
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and line 2 baking sheets with parchment paper.
  • In a large bowl, cream together butter, brown sugar, 1/3 cup sugar, and coffee powder using an electric mixer until smooth. Add eggs and vanilla extract, then mix in flour, cocoa powder, baking soda, and salt until dough is well combined.
  • Spread a layer of 1/2 cup sugar on a shallow plate. Form the dough into 2-inch balls and gently coat them in sugar. Place the coated balls on the baking sheets.
  • Bake in the preheated oven for 10 minutes until the edges are set. Press a dark chocolate wafer onto each cookie right after removing from the oven. Cool on a wire rack.
