Easy-to-make crispy cookies to delight your taste buds!
Ingredients:
  • 85g (1/2 cup) pitted dried dates, roughly chopped
  • 200g (1 cup, firmly packed) brown sugar
  • 125ml (1/2 cup) olive oil
  • 1 egg
  • 4.40 gm vanilla extract
  • 115g (3/4 cup) self-raising flour
  • 115g (3/4 cup) plain flour
  • 5.00 gm ground ginger
  • 70g (1/2 cup) pecans
Instructions:
  • Preheat the oven to 180°C and prepare 2 baking trays with non-stick baking paper.
  • Place the dates in a bowl and cover them with boiling water. Allow them to soak for 5 minutes, then drain them.
  • In a large bowl, mix together sugar, oil, egg, and vanilla. Fold in flours and ground ginger until well combined.
  • Combine pecans and dates, stirring well. Shape mixture into 24 portions and arrange on lined trays, leaving 5cm of space between each. Gently flatten each cookie. Bake in preheated oven for 12 minutes, or until a beautiful golden brown. Transfer to a rack to cool after removing from the oven.
