Delight your family with naturally sweetened date and pecan cookies, no added sugar.
Ingredients:
  • 1 cup chopped dates
  • 0.25 cup chopped pecans
  • 0.25 cup water
  • 0.5 very ripe banana, mashed
  • 1 large egg, lightly beaten
  • 0.5 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 0.25 teaspoon salt
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare a baking sheet by lining it with parchment paper.
  • In a mixing bowl, blend together dates, pecans, water, banana, egg, butter, and vanilla extract.
  • In a separate bowl, combine flour, baking powder, cinnamon, and salt. Then add the mixture to the dates and stir until fully incorporated.
  • Spoon dough onto baking sheet, spacing 1 inch apart, and gently flatten with your palm.
  • Bake the cookies in the preheated oven until they start to brown around the edges, approximately 11 to 13 minutes. Be careful not to over-bake. Then, transfer the cookies to a wire rack to cool immediately.
