Succulent deep-fried turkey breast with zesty dry brine for maximum flavor. Perfect for mastering that whole bird fry!
Ingredients:
  • 2 tablespoons sea salt
  • 1 tablespoon freshly ground black pepper
  • 1 tablespoon red pepper flakes
  • 1 tablespoon granulated garlic
  • 1 tablespoon chili powder
  • 1 (7 pound) turkey breast
  • 2 gallons canola oil for frying
Instructions:
  • In a small jar, mix sea salt, black pepper, red pepper flakes, granulated garlic, and chili powder. Seal the jar tightly and shake vigorously until the seasonings are thoroughly combined.
  • Ensure the turkey breast is thoroughly coated with the spice blend mixture. Wrap it tightly in aluminum foil and refrigerate for 24 hours.
  • Allow the chicken breast to come to room temperature for 20 minutes after taking it out of the refrigerator.
  • Pour oil into a large lidded pot and heat to 325 degrees F (165 degrees C before adding the turkey breast.
  • Carefully submerge the chicken breast in the hot oil, then cover the pot to retain moisture and flavor. Cook until the center is no longer pink and the juices run clear, which usually takes around 25 minutes. Check for doneness by using an instant-read thermometer; it should register at least 165 degrees F (74 degrees C).
