Delicious Mediterranean tuna and olive tomato sauce, perfect for any season!
Ingredients:
  • 2.5 tablespoons olive oil
  • 0.75 cup chopped onion
  • 2 cloves garlic, chopped
  • 1 (5 ounce) can solid white tuna packed in water, drained
  • 1 (14.5 ounce) can whole peeled tomatoes, chopped
  • 1 (4.25 ounce) can black olives, drained and halved
  • 0.5 teaspoon dried basil
  • 0.25 teaspoon dried oregano
  • freshly ground black pepper to taste
  • 1 (28 ounce) can tomato puree
  • 1 (16 ounce) package uncooked angel hair pasta
  • 0.5 cup grated Parmesan cheese for topping
Instructions:
  • In a skillet, warm olive oil over medium heat. Sauté onion and garlic until tender. Add tuna and peeled tomatoes; heat through. Mix in olives. Season with basil, oregano, and pepper, then cook for 5 minutes. Add tomato puree, cover, reduce heat to low, and simmer for 30 minutes, stirring occasionally.
  • 1. Boil a large pot of lightly salted water. Add angel hair pasta and cook for 4 minutes or until al dente. Serve pasta topped with sauce and a sprinkling of Parmesan cheese.
