White cake with vanilla frosting and fresh berries, perfect for a chic summer treat.
Ingredients:
  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1.25 cups white sugar
  • 1 cup softened butter
  • 1 tablespoon vanilla extract
  • 1.25 cups whole milk
  • 0.66666668653488 cup butter, softened
  • 3 cups confectioners' sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons whole milk, or as needed
  • 1 cup strawberries, quartered
  • 1 cup blueberries
Instructions:
  • Preheat the oven to 350°F (175°C) and generously butter two 9-inch cake pans, then dust with flour.
  • Combine flour, baking powder, and salt; then set aside.
  • In a large bowl, cream together white sugar and butter with an electric mixer until beautifully light and fluffy, about 3 minutes. Add eggs one at a time, ensuring each is well mixed. Stir in vanilla extract. Gradually add flour mixture and milk in batches, alternating between the two, mixing briefly after each addition until the batter is thick and smooth.
  • Pour the batter evenly into the 2 cake pans.
  • Bake in the oven that's already heated until a toothpick inserted in the middle comes out clean and edges are slightly browned and pull away from the sides, for 25 to 35 minutes.
  • In a separate bowl, cream the butter until fluffy. Gradually add sugar, beating thoroughly after each addition. Mix in vanilla extract and gradually add milk until frosting is at your preferred consistency. Avoid chilling the frosting before spreading it on the cake.
  • Allow the cakes to cool to room temperature for at least 30 minutes. Then, chill in the refrigerator until cold and firm, which should take about 20 minutes.
  • On a platter, lay down one cake layer. Generously frost with an inch of frosting, ensuring the sides remain unfrosted. Gently press in around one-third of the strawberries and blueberries. Add the second cake layer and repeat the frosting and berry layering process. Finish with another inch of frosting and sprinkle the remaining berries on top. Chill in the refrigerator for 30 minutes prior to serving.
