Deluxe Blackberry Pie

Fresh blackberry pie with brandy-infused pudding filling, spiced with nutmeg and cinnamon.
Ingredients:
  • 4 cups fresh blackberries
  • 1.25 cups white sugar
  • 4 tablespoons cornstarch
  • 2 tablespoons blackberry brandy
  • 1 teaspoon ground nutmeg
  • 1 recipe pastry for a 9 inch double crust pie
  • 1 tablespoon white sugar
Instructions:
  • Preheat the oven to 400°F (200°C) for perfect cooking temperature.
  • Blend 2 cups of blackberries until smooth, strain out seeds, and transfer the puree to a saucepan. Add 1 1/4 cups of sugar, heat on medium until boiling, stirring and scraping constantly. Boil for 5 minutes, then remove from heat.
  • Combine cornstarch and brandy until smooth. Whisk into hot blackberry purée until thickened. Stir in nutmeg and cinnamon off the heat. Adjust thickness with a cornstarch and water mixture if needed.
  • Line a 9-inch pie plate with one pastry, then fill with 2 cups of blackberries. Pour blackberry purée over the berries. Cut the remaining pastry into strips and lay them in a crisscross pattern over the filling, or cover with the pastry and create slits. Sprinkle the top with 1 tablespoon of sugar before baking.
  • Bake until the crust is golden brown, approximately 35 minutes in the preheated oven.
