Satisfying egg dip with crumbled bacon and melty mozzarella, perfect for spreading on crackers.
Ingredients:
  • 6 eggs
  • 8 slices bacon
  • 0.75 cup light mayonnaise
  • 0.75 cup shredded mozzarella cheese
  • 0.5 teaspoon paprika
  • 1.5 tablespoons white sugar
  • 1.5 tablespoons white wine vinegar
  • 2.5 tablespoons mustard
  • paprika for garnish
Instructions:
  • In a saucepan, arrange the eggs in a single layer and add enough water to cover them by 1 inch. Bring to a boil, cover, then let the eggs sit in the hot water for 15 minutes. Drain and cool the eggs under cold running water. Peel and chop.
  • Fry the bacon in a large, deep skillet over medium-high heat until perfectly browned, approximately 10 minutes. Place on a paper-towel-covered plate to drain; crumble after it cools down.
  • In a bowl, mix together eggs, bacon, mayonnaise, mozzarella cheese, paprika, sugar, white wine vinegar, and mustard to create a flavorful chunky dip. Sprinkle with extra paprika for a finishing touch.
