Delicious dill and parsley pesto with Parmesan cheese, perfect for pasta or seafood.
Ingredients:
  • 3 sprigs fresh dill
  • 0.25 cup toasted pine nuts
  • 0.5 cup fresh parsley
  • 1 large clove garlic
  • 0.25 cup freshly grated Parmesan cheese, or more to taste
  • 3 tablespoons olive oil, divided, or as needed
  • 0.25 medium lemon, or to taste
  • 0.125 teaspoon salt, or to taste
  • 0.125 teaspoon ground black pepper, or to taste
Instructions:
  • In a food processor, blend dill sprig leaves, pine nuts, parsley, garlic, and Parmesan cheese until fully combined, about 2-3 minutes.
  • Drizzle in 1 tablespoon of olive oil, a squeeze of fresh lemon juice, and sprinkle in 1/8 teaspoon each of salt and pepper; pulse until well combined.
  • Adjust seasoning to taste by incorporating an additional 1 tablespoon of olive oil and pulsing for a flavorful blend. Gradually mix in more olive oil, lemon juice, salt, and pepper until achieving the preferred taste and texture for the pesto.
