Elevate classic macaroni and cheese with crunchy dill pickle relish for a burst of flavor and texture.
Ingredients:
  • 1.5 cups elbow macaroni
  • 3 tablespoons all-purpose flour
  • 2 cups milk
  • 1 cup shredded extra-sharp Cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 0.33333334326744 cup dill pickle relish, well drained
  • 0.25 cup minced onion
  • 1 teaspoon chile-garlic sauce (such as Sriracha®)
  • 1 slice bread
  • 1 teaspoon butter
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously coat a 1 1/2-quart casserole dish with cooking spray to prevent sticking.
  • Boil a large pot of lightly salted water. Add elbow macaroni and cook until al dente, about 7 minutes. Drain and set aside.
  • As the macaroni cooks, gently melt 3 tablespoons of butter in a large saucepan over medium-low heat. Stir in flour and cook until it turns into a light golden paste, about 5 minutes. Slowly pour in the milk and bring it to a gentle simmer over medium heat. Continue to cook and stir until the sauce thickens, which should take about 10 to 15 minutes.
  • Combine Cheddar and Monterey Jack cheese until melted. Mix in dill pickle relish, onion, Sriracha sauce, salt, and pepper. Stir in cooked macaroni and transfer to casserole dish.
  • Spread both sides of the bread generously with butter and tear into large pieces. Process in a food processor or electric blender until coarse crumbs form. Sprinkle the buttery crumbs on top of the casserole.
  • Bake in the oven until golden brown and bubbling, approximately 45 minutes.
