Delicious puff pastry cups filled with goat cheese and finished with avocado or jam for a tasty, versatile appetizer.
Ingredients:
  • 8 ounces frozen puff pastry, thawed
  • 6 tablespoons goat cheese
  • 3 tablespoons mashed avocado
  • 3 tablespoons jam
  • 1 sun-dried tomato, cut into 3 pieces
  • 2 tablespoons toasted pine nuts
Instructions:
  • Preheat the oven to 375°F (190°C) for a perfect cooking temperature.
  • Cut puff pastry into 6 even squares, each about 4 inches diagonally and 1/4-inch thick. Press each square into a muffin cup gently. Fill 3 pastries with 1 tablespoon goat cheese and avocado each, and the other 3 pastries with 1 tablespoon of jam each.
  • Place the avocado puffs in the preheated oven and bake until the bottoms are beautifully browned, which should take around 10 to 15 minutes. Top each puff with a slice of sun-dried tomato and sprinkle a generous amount of pine nuts over all the puffs. Enjoy!
