Dutch Antillean candy: Coconut chunks glazed in lime-cinnamon sugar.
Ingredients:
  • 1 whole coconut, shelled and drained
  • 1 cup water
  • 0.5 teaspoon ground cinnamon
  • 0.5 cup white sugar
  • 1 tablespoon fresh lime juice
Instructions:
  • Cut the coconut meat into 1/2-inch square pieces.
  • In a saucepan, bring water to a boil over medium-high heat. Stir in cinnamon and sugar until dissolved and boil until the liquid thickens to a syrup. Add coconut pieces and lime juice, then remove from heat.
  • Scoop sugared coconut mixture into small paper cups and allow to set until firm.
