Rice cooked with flavorful ingredients, rolled in grape leaves, and baked to perfection in this tasty dolmathes recipe.
Ingredients:
  • 1 cup olive oil, divided
  • 1.5 pounds onions, chopped
  • 1.75 cups uncooked white rice
  • 2 lemons, juiced
  • 2 tablespoons chopped fresh dill
  • 0.5 cup chopped fresh parsley
  • 2 tablespoons pine nuts
  • 1 (8 ounce) jar grape leaves, drained and rinsed
Instructions:
  • Heat your oven to a toasty 375°F (190°C).
  • In a large saucepan over medium heat, warm 2 tablespoons of oil. Cook onions until tender. Add rice and cook until lightly browned. Pour in 3 1/2 cups water and half of the lemon juice. Lower the heat, cover, and simmer until all liquid is absorbed and rice is tender, around 20 minutes. Fold in dill, parsley, and pine nuts, then take off the heat.
  • Prepare grape leaves by carefully removing the stems. Fill each leaf with 1 tablespoon of rice mixture at the center. Fold the sides in and roll tightly. Arrange in a baking dish with the seam-side down. Drizzle with remaining olive oil, lemon juice, and enough water to cover 1/2 of the dolmathes.
  • Cover the dish with shiny aluminum foil and let it bake in the oven, previously heated, for 45 minutes.
