Pressure cook calabash gourd and chana dal for a quick and delicious vegetarian curry.
Ingredients:
1calabash gourd, peeled and cut into cubes
0.5 cupsplit Bengal gram (chana dal)
1teaspoonground turmeric
3cups water
2tablespoons cooking oil
4dried red chile peppers, broken into pieces
1teaspooncumin seeds
1tablespoonmincedfresh ginger root
1teaspoonmincedgarlic
1teaspoonground red pepper
salt to taste
1teaspoonwhite sugar
Instructions:
In a pressure cooker, bring together calabash, chana dal, turmeric, and water. Seal it and cook on high pressure for 20 minutes. Then, lower the heat to simmer for an additional 3 minutes. Once done, let it sit off the heat to release pressure naturally.
In a large saucepan, heat the oil. Sauté the red chile peppers and cumin seeds until the seeds start to splutter. Add the ginger and garlic, cook for 1 minute. Mix in the calabash, ground red pepper, sugar, and salt. Bring to a boil, then simmer on low for 5 minutes before serving.
