Pressure cook calabash gourd and chana dal for a quick and delicious vegetarian curry.
Ingredients:
  • 1 calabash gourd, peeled and cut into cubes
  • 0.5 cup split Bengal gram (chana dal)
  • 1 teaspoon ground turmeric
  • 3 cups water
  • 2 tablespoons cooking oil
  • 4 dried red chile peppers, broken into pieces
  • 1 teaspoon cumin seeds
  • 1 tablespoon minced fresh ginger root
  • 1 teaspoon minced garlic
  • 1 teaspoon ground red pepper
  • salt to taste
  • 1 teaspoon white sugar
Instructions:
  • In a pressure cooker, bring together calabash, chana dal, turmeric, and water. Seal it and cook on high pressure for 20 minutes. Then, lower the heat to simmer for an additional 3 minutes. Once done, let it sit off the heat to release pressure naturally.
  • In a large saucepan, heat the oil. Sauté the red chile peppers and cumin seeds until the seeds start to splutter. Add the ginger and garlic, cook for 1 minute. Mix in the calabash, ground red pepper, sugar, and salt. Bring to a boil, then simmer on low for 5 minutes before serving.
