Double chocolate fudge brownie with mocha sauce

Indulgent Monday comfort food to kickstart your week - worth the splurge!
Ingredients:
  • Melted butter, to grease
  • 400.00g Dark Chocolate Melts
  • 150g butter, chopped
  • 315g (1 1/2 cups) caster sugar
  • 115g (3/4 cup) plain flour
  • 35g (1/3 cup) cocoa powder
  • 250g Milk Chocolate Melts
  • 3 eggs
  • Cocoa powder, to dust
  • Double cream, to serve
  • 250ml (1 cup) thickened cream
  • 40.00 ml coffee granules
Instructions:
  • Preheat your oven to 160°C. Grease a 20cm springform pan with melted butter and line it with non-stick baking paper.
  • Create a double boiler by melting the dark chocolate and butter together in a large heatproof bowl set over simmering water. Stir occasionally with a metal spoon until smooth and fully melted, ensuring the bowl does not touch the water.
  • In a large bowl, mix together sugar, flour, cocoa powder, milk chocolate, and dark chocolate mixture. Add the eggs and stir until just combined. Pour into the prepared pan and bake in the oven for 1 hour and 20 minutes, or until a skewer inserted into the center comes out with crumbs clinging to it. Allow to cool for 2 hours before serving.
  • In a saucepan over low heat, combine dark chocolate, thickened cream, and coffee to create the mocha sauce.
  • Stir with a metal spoon until the chocolate is fully melted and the mixture becomes smooth.
  • Sprinkle the brownie with cocoa powder. Cut into wedges, then arrange on serving plates. Drizzle with mocha sauce and a dollop of double cream before serving.
