Homemade version of iconic taco place specialty: soft flour tortilla spread with refried beans, encasing crispy taco shell filled with seasoned meat, cheese, lettuce, tomato, onion, and guacamole.
Ingredients:
  • 1 pound ground beef
  • 1 (1 ounce) packet taco seasoning mix, divided
  • 1 (16 ounce) can refried beans
  • 0.66666668653488 cup water
  • 12 prepared crisp taco shells
  • 2 avocados
  • 1 tablespoon sour cream
  • 1 fresh lime, juiced
  • salt and black pepper to taste
  • 12 (7 inch) flour tortillas
  • 2 cups shredded Cheddar cheese
  • 1 cup shredded lettuce
  • 1 large tomato, chopped
  • 0.25 red onion, chopped
  • 0.5 cup sour cream
Instructions:
  • In a skillet over medium heat, cook the ground beef, sprinkling 3/4 of the taco seasoning packet. Stir and break up the meat until browned and crumbly, about 10-15 minutes. Drain excess grease.
  • In a small saucepan, combine refried beans and water. Sprinkle with remaining seasoning packet and heat over low heat until simmering.
  • Preheat the oven to 300°F (150°C) and warm the crisp taco shells on a baking sheet for 3 to 5 minutes.
  • Prepare the guacamole by mashing the peeled and seeded avocados in a bowl with 1 tablespoon of sour cream, lime juice, salt, and pepper to taste, then set aside.
  • To assemble the tacos, generously spread warmed refried beans on each flour tortilla. Gently wrap the tortilla around a crispy shell. Add a layer of seasoned ground beef, followed by a generous sprinkle of Cheddar cheese. Finish with shredded lettuce, diced tomato and onion, and a dollop of sour cream and guacamole.
