Elevate your Thanksgiving feast with beautiful double-layered pumpkin cheesecake bars that will impress your guests.
Ingredients:
  • 2 cups graham cracker crumbs
  • 0.5 cup unsalted butter, melted
  • 0.33333334326744 cup white sugar
  • 2 (8 ounce) packages cream cheese, softened
  • 0.5 teaspoon vanilla extract
  • 2 large eggs
  • 0.5 cup canned pumpkin puree
  • 0.5 teaspoon ground cinnamon
  • 1 pinch ground cloves
  • 1 pinch ground nutmeg
  • 0.5 cup whipped topping (such as Cool Whip®)
Instructions:
  • Mix together graham cracker crumbs, butter, and sugar to make the crust. Press the mixture onto the bottom and slightly up the sides of a 9-inch square baking pan. Chill in the refrigerator until needed.
  • Preheat the oven to a toasty 325 degrees F (165 degrees C).
  • In a mixing bowl, blend cream cheese, sugar, and vanilla extract until smooth using an electric mixer. Add eggs one at a time. Spread 1 cup of the batter onto the bottom of the graham cracker crust.
  • Gently blend pumpkin, cinnamon, cloves, and nutmeg into the remaining cream cheese mixture. Spread the pumpkin mixture over the crust topped with the cream cheese.
  • Bake in the oven until the center is set, approximately 35-40 minutes. Let it cool for 20-30 minutes, then refrigerate until firm, about 3 hours. Cut into 16 squares and serve with whipped topping.
