Dracula's fang ice-cream sandwiches

Make spooky Halloween ice-cream treats for kids to enjoy - prepare a day in advance.
Ingredients:
  • 1 litre mint chocolate chip ice-cream
  • 75g unsalted butter, softened
  • 112.50 gm icing sugar mixture
  • 10.40 gm milk
  • Red gel food colouring
  • 8 milk bottle lollies
  • 24 choc ripple biscuits
  • 50g marshmallow
Instructions:
  • Prepare your 18cm x 28cm slice pan by greasing it and lining the base and sides with baking paper, making sure to extend the paper 4cm above the edges of the pan.
  • Allow the ice-cream to soften in a large bowl for 10 minutes (do not melt). Transfer to prepared pan and level the top with the back of a spoon. Cover with plastic wrap and freeze for 6 hours or overnight.
  • Transfer the ice-cream from the pan to a board using baking paper. Use a 3.5cm round cookie cutter to cut out 12 rounds from the ice-cream, discarding the excess. Place the rounds on a baking paper-lined tray and put them back in the freezer.
  • While using an electric mixer, beat butter for 8 minutes until it turns light and fluffy. Slowly add icing sugar and beat until well combined. Mix in milk and continue beating until fully combined. Add red food coloring to tint the icing.
  • Trim the tops off the milk bottles and cut each bottle lengthwise into 3 pieces. Trim one end of each piece into a point to create 'fangs.' Spread icing on the flat side of each biscuit.
  • Swiftly place one scoop of ice-cream onto the middle of one frosted cookie, following the visual reference closely. Arrange marshmallows and two pointed 'fangs' along the perimeter, pressing gently into the frosting to adhere. Top with another cookie, frosting side facing down, ensuring the 'fangs' slightly hang over the edge of the cookie. Flip the cookie over onto a tray lined with parchment paper and return to the freezer. Repeat the process with the rest of the cookies, ice-cream, marshmallows, and 'fangs'. Serve right away or freeze for later enjoyment.
