Delicious spice cake filled with dried apple, pecans, coconut, and currants, topped with apple butter icing. Fabulous taste!
Ingredients:
  • 1 (18.25 ounce) package spice cake mix
  • 1 cup dried apples
  • 1 cup chopped pecans
  • 0.5 cup shredded or flaked coconut
  • 0.33000001311302 cup currants
  • 0.25 cup brown sugar
  • 0.5 cup butter
  • 2 cups apple butter
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) while lightly greasing the bottoms of two 9-inch round cake pans.
  • Combine the spice cake mix, dried apples, pecans, coconut, currants, eggs, brown sugar, vanilla extract, and butter in a large bowl. Transfer the mixture into the cake pans.
  • Bake in the preheated oven for 25-30 minutes until a toothpick inserted in the center comes out clean, then cool on a wire rack.
  • Divide each cake layer into quarters, generously spread apple butter between the sections, then carefully stack the layers back together.
