Apple strudel

Golden filo pastry filled with sweet dried apples and figs is a delightful dessert for any gathering.
Ingredients:
  • 2 large Granny Smith apples
  • 56.10 gm sultanas
  • 125.00 ml dried figs, chopped
  • 1.25 gm ground cinnamon
  • 74.25 gm white sugar
  • 6 sheets filo pastry
  • 60g butter, melted
  • 250.00 ml fresh white breadcrumbs
  • 24.00 gm icing sugar, to dust
  • Purchased custard, warmed, to serve
Instructions:
  • 1. Preheat your oven to 180°C. 2. Line a 38cm-long rectangular tray with baking paper. 3. Peel, core, and thinly slice the apples. Place them in a large bowl. 4. Drizzle the apples with lemon juice to keep them from browning. 5. Add in the sultanas, figs, cinnamon, and sugar. 6. Stir everything together until well combined.
  • Lay one sheet of filo on a work surface. Brush with melted butter and sprinkle 2 tablespoons of breadcrumbs. Add another filo sheet on top. Repeat layering filo, butter, and breadcrumbs until you have 6 layers.
  • Spread the apple mixture along one long edge of the filo, leaving a 6cm border at both short ends. Gently fold the ends in and roll it up. Transfer to the tray and generously brush the top with butter.
  • Bake for 45 minutes until the pastry is crisp and golden. Let it rest for 10 minutes, then dust with icing sugar before serving with warm custard.
