Apple muffins bursting with fresh apples and a sweet cinnamon crumb topping: the ultimate on-the-go breakfast or snack!
Ingredients:
  • 2 cups all-purpose flour
  • 0.5 teaspoon baking soda
  • 0.5 cup butter
  • 2 large eggs
  • 1.25 teaspoons vanilla
  • 1.5 cups chopped apples
  • 0.33333334326744 cup packed brown sugar
  • 1 tablespoon all-purpose flour
  • 0.125 teaspoon ground cinnamon
  • 1 tablespoon butter
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and prepare a 12-cup muffin tin by greasing or lining it with paper liners.
  • Combine the flour, baking powder, baking soda, and salt in a medium bowl.
  • In a large bowl, cream together sugar, butter, and eggs until smooth. Add vanilla. Fold in apples, then slowly incorporate the flour mixture. Fill muffin cups 2/3 full with batter.
  • Create the topping by combining brown sugar, flour, and cinnamon in a small bowl. Incorporate the butter until the mixture forms coarse crumbs, then sprinkle generously over each muffin top.
  • Bake in the preheated oven for about 20 minutes, or until a toothpick inserted in the center of a muffin comes out clean. Allow to sit for 5 minutes before moving the muffins to a wire rack to cool.
