Irresistible traditional apple strudel: crispy filo pastry filled with moist, spicy fruit. Deliciously golden and crunchy on the outside!
Ingredients:
  • 3 granny smith apples
  • 42.00 gm lemon juice
  • 125.00 ml raisins
  • 125.00 ml dried figs, roughly chopped
  • 107.50 gm caster sugar
  • 2.50 gm ground cinnamon
  • 1/4 tsp nutmeg
  • 187.50 ml fresh breadcrumbs
  • 6 sheets of filo pastry
  • Olive oil cooking spray
  • 24.00 gm icing sugar
Instructions:
  • Preheat the oven to 180°C. Line a large baking tray with baking paper. Peel, core, and thinly slice the apples. In a bowl, mix the apples with lemon juice, raisins, dried figs, sugar, cinnamon, nutmeg, and 1/4 cup breadcrumbs, stirring gently until well-combined.
  • Lay a sheet of filo on a work surface. Lightly coat with oil, then sprinkle evenly with 1 tablespoon of breadcrumbs. Add another filo sheet and repeat layering filo and breadcrumbs until you have a total of six layers.
  • Spread the apple mixture along one long edge of the filo, making sure to leave a 3cm border at the short ends.
  • Roll up the pastry by folding the ends in. Place it onto the prepared tray. Spray with olive oil and bake for 45 minutes until the pastry turns golden. Let it stand for 10 minutes, then slice and dust with icing sugar. Serve with low-fat yogurt, ice cream, or cream if desired.
