Indulge in crispy filo pastry enveloping a tender apple filling in this delectable dessert.
Ingredients:
  • 750g granny smith apples, peeled, cored, sliced
  • 20.00 gm caster sugar
  • 1.25 gm ground cinnamon
  • 8 sheets filo pastry
  • Olive oil spray
  • 40.00 ml dried breadcrumbs
  • 3.00 gm icing sugar mixture
  • 165.00 ml low-fat vanilla yoghurt, to serve
Instructions:
  • Preheat your oven to 190°C/170°C fan-forced and line a large baking tray with baking paper. In a large frying pan over medium heat, mix apple, sugar, cinnamon, and 2 tablespoons cold water. Cover and cook for 10 minutes until tender, stirring occasionally. Uncover and cook for 4 more minutes until the liquid has evaporated. Let it cool completely before using.
  • On a clean surface, lay down one sheet of filo pastry. Lightly coat the filo with cooking spray. Sprinkle 1 1/2 teaspoons of breadcrumbs over the filo. Place another sheet of filo on top. Repeat this process with the remaining filo sheets, oil, and breadcrumbs, ending with a final sheet of filo on top.
  • Spread the apple mixture along one long side, leaving a 9cm border at the short ends. Fold in the short sides and roll up tightly to enclose. Place on a prepared tray seam-side down, spray with oil, and bake for 30 minutes until golden. Sprinkle with icing sugar, slice, and serve with yogurt.
