Grilled beer can chicken - juicy, flavorful, and effortless!
Ingredients:
  • 1 (2 to 3 pound) whole chicken
  • 1 (12 fluid ounce) can beer
  • 5 tablespoons poultry seasoning
  • 4 dashes liquid smoke flavoring
  • 4 bay leaves
  • 1 long metal skewer
Instructions:
  • Wash and pat dry the chicken. Trim off any extra fat, keeping the skin intact. Gently lift the skin from the breast and thigh, then tuck bay leaves underneath. Finally, generously season the chicken with poultry seasoning.
  • Savor half of the beer from the can; mix in liquid smoke with the leftover beer. Lift the tab on the beer can until it stands upright.
  • Position the beer can inside the chicken, ensuring it is level with the bottom of the chicken. Secure the can in place by threading a skewer through the wing, ribs, beer can tab, and out the other side. This will prevent the can from slipping out of the chicken.
  • Preheat the grill by lighting the coals and arranging them in a ring around the edge.
  • Stand the chicken upright on the can in the center of the grill. Close the grill and cook for 2 hours until a meat thermometer inserted into the center reads at least 165 degrees F (74 degrees C).
  • Gently transfer the chicken from the grill, being careful not to spill the contents of the can. Remove the skewer and beer can, then allow the chicken to rest for 15 minutes before slicing.
