Dry-Rub Barbecue Pork Roast

Homemade BBQ dry rub with butter basting for juicy, flavorful pork roast. Perfect for feeding a crowd on buns, tacos, or sliced with extra sauce. Skip store-bought and create magic with spices from your pantry.
Ingredients:
  • 2 tablespoons cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon packed brown sugar
  • 1 tablespoon salt
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon dried thyme leaves
  • 1/2 teaspoon ground red pepper (cayenne)
  • 1 boneless pork center loin roast (about 2 1/2 to 3 1/2 lb), trimmed of visible fat
  • 2 tablespoons butter, melted
Instructions:
  • Preheat oven to 400°F. Line a 15x10x1-inch pan with foil and spray with cooking spray. Combine vinegar and mustard in a small bowl. In another small bowl, mix brown sugar, salt, paprika, garlic powder, onion powder, cumin, coriander, thyme, and red pepper. Coat the pork with the vinegar mixture and rub with the dry ingredients. Place the pork in the center of the pan.
  • After roasting uncovered for 40 minutes, rotate the pork. Once turned, generously brush the entire surface with melted butter and continue roasting for an additional 5 to 10 minutes, or until the meat thermometer registers 140°F when inserted into the center. Take the pork out of the oven, cover it with foil, and allow it to rest for 10 minutes. Slice the pork and serve with barbecue sauce, if preferred.
