Duchess Potatoes

Party-ready mashed potatoes!
Ingredients:
  • 12 medium boiling potatoes, (4 pounds), peeled and cut into large pieces
  • 2/3 to 1 cup milk
  • 1/2 cup butter or margarine, softened
  • 1/8 teaspoon pepper
  • 4 eggs, beaten
  • Butter or margarine, melted
Instructions:
  • Bring a pot of salty water to a boil in a Dutch oven. Add the potatoes and cover the pot until boiling. Cook for 20 to 25 minutes until tender; then, drain the potatoes. Shake the pan over low heat to dry the potatoes.
  • Preheat the oven to 425°F and grease a cookie sheet.
  • Mash potatoes until smooth. Gradually add milk, beating well after each addition until desired creamy texture is achieved (quantity needed may vary based on potato type). Stir in 1/2 cup butter, salt, and pepper vigorously until fluffy. Gently mix in eggs until fully incorporated.
  • Spoon or pipe potato mixture onto cookie sheet to create mounds or decorative rosettes.
  • Brush the golden-brown crust with a generous amount of melted butter. Bake for approximately 15 minutes or until perfectly golden.
