Satisfying, hearty, and nostalgic side dish.
Ingredients:
  • 400g desiree potatoes, peeled, roughly chopped
  • 1 egg yolk
  • 50g butter, melted
Instructions:
  • Preheat your oven to 220°C/200°C fan-forced. Grease a large baking tray and line it with baking paper.
  • 1. In a saucepan, boil the potato in cold water until tender, about 15 minutes. Drain and transfer to a bowl. Mash the potato. Press it through a fine sieve into another bowl using a large metal spoon. Add the egg yolk and half of the butter. Season with salt and pepper, then stir until combined.
  • Transfer mixture into a piping bag with a 2cm fluted nozzle. Create sixteen 3cm rosettes on a prepared tray.
  • Drizzle the remaining butter over the potato slices and bake until lightly browned, about 20 to 25 minutes. Serve and enjoy!
