Ingredients:
  • 2 pounds potatoes (Yukon Golds work best), peeled and cut into chunks
  • Salt
  • 1/4 cup heavy cream
  • 4 tablespoons unsalted butter, divided
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon black pepper
  • 3 egg yolks
Instructions:
  • Cook the potatoes: In a 3-quart pot, cover the potatoes with cold water, add a hint of salt, then bring to a gentle simmer. Cook for 20-25 minutes until the potatoes are easily pierced with a fork.
  • First, melt 2 tablespoons of butter to later coat the potatoes. Next, preheat the oven to 425° while the potatoes are boiling.
  • Drain the potatoes in a colander after cooking. Return them to the pot over low heat to release steam for about a minute.
  • Make incredibly creamy mashed potatoes: Mash 2 tablespoons of butter into the potatoes until fully blended. Fold in nutmeg, black pepper, and heavy cream. Season to taste with salt, then gently stir in egg yolks until smooth. Be careful not to overmix to avoid a gluey texture.
  • For visually appealing potatoes, pipe them onto a cookie sheet using a large star point piping bag or create peaks in a casserole dish with a fork. Enhance the flavor by brushing melted butter on top before baking.
