Savory bacon and beer cupcakes with beer-infused cream cheese frosting.
Ingredients:
  • 2 1/4 cups Original Bisquick™ mix
  • 1 cup shredded Cheddar cheese (4 oz)
  • 3 slices bacon, crisply cooked, crumbled
  • 3/4 cup brown ale beer
  • 3 tablespoons butter, melted
  • 8 oz cream cheese, softened
  • 2 tablespoons butter, softened
  • 1/4 cup powdered sugar
  • 2 tablespoons brown ale beer
  • 2 slices bacon, crisply cooked, crumbled
  • Ground red pepper (cayenne)
Instructions:
  • Preheat oven to 425°F. Line 10 regular-size muffin cups with foil baking cups and lightly coat with cooking spray.
  • Combine Bisquick mix, sharp Cheddar cheese, and crumbled bacon in a large bowl. Mix in 3/4 cup beer and melted butter until ingredients are incorporated. Spoon batter into muffin cups evenly.
  • Bake until beautifully golden brown, then transfer out of the pan and let cool for 15 minutes.
  • In a small bowl, combine cream cheese and softened butter. Mix in powdered sugar and 2 tablespoons of beer until smooth. Spread the frosting on each cupcake and top with bacon. Finish by sprinkling with red pepper for a touch of heat.
