Dukkah Roasted Potatoes

Elevate roasted potatoes with nutty, aromatic Egyptian dukkah seasoning.
Ingredients:
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 0.25 teaspoon salt
  • 0.25 teaspoon pepper
  • 2 pounds red potatoes, cut into 2-inch cubes
  • 6 large cloves garlic, peeled and smashed
  • 3 tablespoons butter, melted
  • 3 tablespoons dukkah (such as Manitou Trading Company®)
  • salt to taste
  • 2 tablespoons chopped fresh parsley
Instructions:
  • Preheat the oven to 375°F (190°C) for the perfect cooking temperature.
  • Combine olive oil, lemon juice, salt, and pepper in a small bowl, whisk until well blended.
  • In a 11x13-inch baking dish, combine potatoes and garlic cloves. Drizzle with olive oil mixture and toss until evenly coated.
  • Roast in the preheated oven for 40 minutes, tossing potatoes every 10-15 minutes for even cooking.
  • Combine butter and dukkah in a small bowl, then generously brush over the potatoes. Roast for another 10-15 minutes until the potatoes are tender and golden. Finish with a sprinkle of salt and a garnish of fresh parsley before serving.
